Zucchini Bake for One

The person that thinks dinner for one should be takeout, a simple PB&J, and/or a bag of chips might be the same person that uses their oven for storage. Yes, I'm speaking from experience here. I mean, why bother going through all the trouble if it's just you, right? Uh, because you're worth it! 

And, you will save money, eat healthily, and because it's fun! If you are expecting a guest, simply double the recipe. Quadruple it if you're a family of four. You do you, boo. Enjoy!  

Zucchini Bake for One

RECIPE

Ingredients:

98 g ground beef

¼ tsp garlic minced

1/8 (13g) chopped red onion

½ (50g) small zucchini ribboned

1/8 (15g) small tomato chopped

¼ cup (28g) shredded mozzarella cheese

1/8 Tbsp olive oil

½ tsp tomato sauce

salt and pepper to taste

STEPS:

1. Preheat oven to 350cF (175C)

2. Fry ground beef and add onion together.

3. Continue to cook till browned and add tomato, salt, and pepper.

4. Add zucchini and tomato sauce and cook till zucchini is tender - about 5 minutes.

5. Transfer to a baking dish and sprinkle with mozzarella cheese.

6. Bake for 10-15 minutes or until cheese is melted and slightly browned.
